Vigo Yellow Rice Copycat
A fragrant yellow rice made with turmeric, garlic, and onion, cooked in broth for a savory side dish. This copycat version of Vigo yellow rice is quick and easy to prepare.
Ingredients
- 1 cup long-grain white rice rinsed
- 2 cup water or chicken broth
- 2 tbsp extra-virgin olive oil or butter
- 1 tsp ground turmeric
- 1 tsp garlic powder
- 1 tsp onion powder or dried minced onion
- 1 tsp chicken bouillon
- 1/4 tsp salt
- crushed saffron threads
- 1 Sazón seasoning

Prepare
- Rinse 1 cup long-grain white rice

Step 1.
Rinse the rice thoroughly to remove excess starch.

In a medium saucepan, heat oil or butter over medium heat. Add the rinsed rice and sauté for 2-3 minutes until lightly toasted.
