Let's Cook

  1. Step 1.

    Preheat the oven to 425°F.

  2. Step 2.

    Pat the chicken thighs dry with paper towels, then season generously with kosher salt and freshly ground black pepper.

    Heat 1 tablespoon of high-heat oil (such as canola or safflower) in a 10-inch oven-safe skillet over medium heat. Place the chicken in the skillet skin side down and cook until deep golden brown, about 7 minutes. Flip and cook for 2 more minutes. Transfer the chicken to a plate and pour off the fat from the skillet.

  4. Step 4.

    Add the chopped bacon to the same skillet and cook over medium-low heat until it just starts to crisp, about 5 minutes. Stir in the chopped onion, celery, and carrots; cook, stirring often, until softened, about 7 minutes. Add the minced garlic, chopped rosemary, and red pepper flakes; cook until fragrant, about 1 minute. Season with salt and pepper to taste.

  5. Step 5.

    Add the rinsed and drained beans and chicken broth to the skillet; stir to combine. Return the chicken to the skillet, nestling it skin side up among the beans. Transfer the skillet to the oven and roast until the chicken reaches an internal temperature of 165°F or the meat is white throughout, 30 to 40 minutes. Let rest for 5 minutes before serving.
