Paprika Schnitzel

Veal cutlets are sautéed and served in a rich paprika-sour cream sauce with onions, finished with parsley and optional capers or anchovies. Traditionally accompanied by spätzle or buttered egg noodles.
Ingredients
- 1 Sautéed Veal Cutlets or Scaloppine (opens in new tab)
- 2 tablespoons butter
- 1 small onion, thinly sliced
- 1 cup chicken stock or broth
- 3 tablespoons sweet paprika
- ½ cup sour cream
- Salt and black pepper
- 2 tablespoons chopped parsley
- (1 tablespoon capers or chopped anchovies)
- 1 Spätzle or Buttered Egg Noodles (opens in new tab)
Let's Cook

Step 1.
Prepare: Sautéed Veal Cutlets or Scaloppine

Step 2.
After browning the cutlets, wipe out the skillet and melt: 2 tablespoons butter

Step 3.
Add and cook, stirring, until lightly browned: 1 small onion, thinly sliced

Step 4.
Add and simmer for 5 minutes: 1 cup chicken stock or broth; 3 tablespoons sweet paprika

Step 5.
Stir in: ½ cup sour cream

Step 6.
Add the veal and just heat through. Do not boil. Season to taste with: Salt and black pepper

Step 7.
Garnish with: 2 tablespoons chopped parsley; (1 tablespoon capers or chopped anchovies)

Serve with: Spätzle or Buttered Egg Noodles
