Let's Cook

  1. Step 1.

    In a large bowl, toss the chicken pieces with the olive oil, then add the dried oregano, ground sumac, ½ teaspoon salt, and ½ teaspoon pepper. Add the grape tomatoes and roughly chopped onion, and toss everything together to coat evenly.

  2. Step 2.

    Preheat the air fryer to 400°F. Arrange the chicken and vegetables in a single, even layer in the air fryer basket. Air fry until the chicken is golden brown and cooked through, 15 to 20 minutes, shaking the basket occasionally to ensure even cooking.

  3. Step 3.

    While the chicken and vegetables are air frying, toss the couscous with the grated lemon zest in a medium bowl. Prepare the couscous according to the package directions. Once cooked, fluff it with a fork, then fold in the lemon juice and 2 tablespoons of the chopped fresh dill.

  4. Step 4.

    To serve, spoon the couscous onto plates or into bowls. Top with the air-fried chicken and vegetables, and spoon any juices collected at the bottom of the air fryer over the top. Sprinkle with the remaining 2 tablespoons of dill and crumbled feta cheese. Serve with lemon wedges on the side, if desired.
