About ⅔ cup In addition to pork or chicken, this rub is also good for seasoning shrimp and fish with jerk-type flavors. When grilling jerk-rubbed items, baste them with lime juice periodically, or after each turn.

  • 3 tablespoons dried thyme, crumbled
  • 2 tablespoons brown sugar
  • 2 tablespoons red pepper flakes
  • 1 tablespoon salt
  • 1 tablespoon black pepper
  • 1 tablespoon dry mustard
  • 2 teaspoons ground allspice
  • 1 teaspoon ground ginger
  • ¼ teaspoon ground cloves
