3 servings Flat omelets and their Italian counterparts, frittatas, are made with vegetables, meats, or other savory ingredients mixed into the eggs. You may use any of the Fillings for Omelets, except perhaps, sliced avocado, allowing about 1 cup of filling to 3 eggs. Frittatas are served hot or at room temperature cut into wedges. To avoid sticking, use a well-seasoned 10- to 12-inch cast-iron skillet or nonstick ovenproof skillet.

    • 2 or 3 large eggs
    • ⅛ teaspoon salt
    • Pinch of black pepper
    • 2 tablespoons butter
    • (Softened butter)
    Sub-recipe steps
    1. Beat with a fork until the whites and yolks are blended: 2 or 3 large eggs; ⅛ teaspoon salt; Pinch of black pepper
    2. Have ready a hot serving plate. Heat in a 6- to 8-inch skillet, preferably nonstick, over medium-high heat: 2 tablespoons butter
    3. Tilt the skillet to coat the sides and bottom thoroughly, until the butter has melted. Pour in the eggs. With one hand, agitate the skillet forward and backward, keeping the egg mass sliding as a whole over the bottom. At the same time, “scramble” the eggs by quickly swirling in a circular motion, as shown below. The rhythm of the skillet and the stirring is like a child’s trick of patting the head while rubbing the stomach. At this point the heat in the skillet may be sufficient to cook the eggs, and you may want to lift the skillet from the heat as you gently swirl the eggs. If desired, once the egg is nearly set, spread it evenly in the skillet by pressing it with the spatula and sprinkle the top with: (⅓ cup any Fillings for Omelets, at room temperature)
    4. Tip the handle up to a 45-degree angle and flip the omelet over, away from the handle, as shown in the center. Fold it over once or twice, or roll it bit-by-bit for a more elegant presentation. If the omelet shows any tendency to stick, slip a spatula underneath it or give the skillet handle a sharp rap or two with the fist, as shown below. Slant the skillet to 90 degrees or more over the serving plate until the omelet slides out of the skillet with its ends folded under on the plate—ready to serve. If desired, for a shiny, glazed surface, rub the top with: (Softened butter)
    5. Serve at once.

  • ¼ teaspoon black pepper
  • 1½ tablespoons olive oil

Let's Cook

  1. Step 1.

    Have ready: 1½ to 2 cups any Fillings for Omelets, preferably a combination of several

  2. Step 2.

    Beat with a fork until blended: 6 large eggs

  3. Step 3.

    Stir in the filling. If the filling has not been seasoned, add: ½ teaspoon salt; ¼ teaspoon black pepper

  4. Step 4.

    Heat in a 10-inch skillet over medium heat: 1½ tablespoons olive oil

  5. Step 5.

    Swirl the oil around to coat the skillet well. Pour in the egg mixture. With one hand, agitate the skillet forward and backward, keeping the egg mass sliding as a whole over the skillet bottom. At the same time, “scramble” the eggs by swirling in a circular motion with a spatula until the bottom of the frittata is set and the top is still creamy. To finish cooking the top, place the frittata under a hot broiler until the top is firm. A traditional frittata is not browned, but we don’t mind a slightly bronzed omelet. Transfer to a warm platter, cut into wedges, and serve.
