Fried Mozzarella Sticks

Ingredients

  • 1-pound block mozzarella
  • ½ cup all-purpose flour
  • 2 eggs
  • ½ cup seasoned dry bread crumbs
  • 3 inches vegetable oil
  • 1
    • 2 pounds fresh plum or Roma tomatoes, peeled, and coarsely chopped, or one 28-ounce can whole tomatoes
    • ⅓ cup olive oil
    • 3 to 6 garlic cloves, to taste, halved or lightly smashed
    • 6 sprigs basil
    • 6 sprigs parsley
    • (½ teaspoon red pepper flakes)
    • Salt and black pepper
    Sub-recipe steps
    1. Combine in a large saucepan and bring to a simmer over medium-low heat: 2 pounds fresh plum or Roma tomatoes, peeled, and coarsely chopped, or one 28-ounce can whole tomatoes; ⅓ cup olive oil; 3 to 6 garlic cloves, to taste, halved or lightly smashed; 6 sprigs basil; 6 sprigs parsley; (½ teaspoon red pepper flakes)
    2. Simmer, uncovered, crushing the tomatoes with a potato masher or a wooden spoon to break them up, until the sauce is thickened, about 10 minutes. For a smoother texture, you may pass the sauce through a food mill or puree in a blender or a food processor. Season to taste with: Salt and black pepper

Let's Cook

  1. Step 1.

    Cut into 3 ½ × ½ × ½-inch sticks: 1-pound block mozzarella

  2. Step 2.

    Spread in a shallow dish: ½ cup all-purpose flour

  3. Step 3.

    Beat in a shallow bowl: 2 eggs

  4. Step 4.

    Spread on a plate: ½ cup seasoned dry bread crumbs

  5. Step 5.

    Dredge the mozzarella sticks lightly in the flour, shaking off the excess. One by one, dip in the egg, coating completely, then roll in the bread crumbs to coat. Put the sticks on a plate and freeze for 15 minutes. Meanwhile, heat to 365°F in a deep-fryer, deep heavy pot, or Dutch oven: 3 inches vegetable oil

  6. Step 6.

    Fry the mozzarella sticks in batches until golden brown, about 1 minute. Drain on paper towels. Serve hot with: Marinara Sauce
