Creamy Parmesan Dressing

About ¾ cup Called “Half-and-Half Dressing” in previous editions of Joy, this dressing is a fine compromise between creamy and tangy and just happens to be an excellent substitute for the dressing in Caesar Salad.
Ingredients
- 1 ½ cup Vinaigrette (opens in new tab)
- ½ cup grated Parmesan (2 ounces)
- 1 ¼ cup mayonnaise, store-bought or homemade (opens in new tab)
- 1 garlic clove, minced or grated on a rasp grater
- (1 to 3 anchovy fillets, to taste, minced)

Step 1.
Whisk to combine in a medium bowl: ½ cup Vinaigrette; ½ cup grated Parmesan (2 ounces); ¼ cup mayonnaise, store-bought or homemade; 1 garlic clove, minced or grated on a rasp grater; (1 to 3 anchovy fillets, to taste, minced)

Step 2.
Use immediately, or refrigerate for up to 5 days.
