Let's Cook

  1. Step 1.

    Using a ribbon peeler, slice the courgettes into fine ribbons and place them in a large serving bowl. Add the halved cherry tomatoes to the bowl and set aside while you prepare the dressing.

    In a small jug or bowl, combine the lime juice, chilli powder, brown sugar, crushed garlic, fish sauce, and sesame oil. Whisk until the sugar dissolves and the dressing is well incorporated.

    Pour the dressing over the courgette ribbons and tomatoes. Toss gently to coat all the ingredients evenly.

  4. Step 4.

    Garnish the salad with chopped fresh mint and roasted peanuts. Serve immediately.
