4 to 6 servings In the 1963 edition of Joy, Marion recommends topping this casserole with a crust of crushed corn flakes and grated Romano cheese. We agree.

    • 2 pounds broccoli
    • Salt
    Sub-recipe steps
    1. Trim, above, and cut into florets: 2 pounds broccoli
    2. Peel the stalks and cut into ½-inch slices. Place florets and stalk pieces in a steamer basket over 1 inch of boiling water. Cover and steam until barely tender, 4 to 6 minutes. Season to taste with: Salt
    3. Sprinkle with: Buttered Bread Crumbs
    4. Or toss with: Brown Butter or melted butter and lemon juice
    5. Or serve with one of the following sauces: Any vinaigrette; Sun-Dried Tomato Pesto or Romesco Sauce; Tahini Dressing, Raita, or Tzatziki; Hollandaise or Sauce Mornay; Miso Beurre Blanc or Nuoc Cham
  • 2 tablespoons butter
  • 1 small onion, minced
  • 2 tablespoons all-purpose flour
  • 1 cup milk
  • ½ teaspoon salt
  • 1 cup grated Cheddar (4 ounces)
  • 1 cup corn flakes, lightly crushed
  • ½ cup grated Romano (2 ounces)

Let's Cook

  1. Step 1.

    Preheat the oven to 425°F. Butter a 9-inch square baking dish. Prepare: Steamed Broccoli

  2. Step 2.

    Drain, finely chop, and set aside. Melt in a medium saucepan: 2 tablespoons butter

  3. Step 3.

    Add and sauté until softened: 1 small onion, minced

  4. Step 4.

    Stir in until blended: 2 tablespoons all-purpose flour

  5. Step 5.

    Add while whisking constantly: 1 cup milk; ½ teaspoon salt

  6. Step 6.

    Bring to a simmer, whisking, until thickened. Remove from the heat and stir in: 1 cup grated Cheddar (4 ounces)

  7. Step 7.

    Add the broccoli and stir to combine. Pour into the baking dish and top with: 1 cup corn flakes, lightly crushed; ½ cup grated Romano (2 ounces)

  8. Step 8.

    Bake until bubbling around the edges and browned, about 20 minutes.
