A moist banana layer cake with cream cheese or chocolate sour cream frosting, optionally filled with fresh banana slices.

Ingredients

  • 2 ¼ cups sifted (225g) cake flour
  • ¾ teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup lightly mashed ripe bananas (about 2 large)
  • ¼ cup (60g) plain yogurt or buttermilk
  • 1 teaspoon vanilla
  • 1 stick (4 oz or 115g) unsalted butter, softened
  • 1 cup plus 2 tablespoons (225g) sugar
  • 2 large eggs
  • 2 ripe bananas, sliced
  • 1
    • 8 ounces cold cream cheese, cut into cubes
    • (6 tablespoons [¾ stick] unsalted butter, softened)
    • 2 teaspoons vanilla
    • 3 cups powdered sugar, sifted
    • (Grated lemon or orange zest, ground cinnamon, or liqueur)
    • 8 ounces cold cream cheese, cut into cubes
    • (5 tablespoons unsalted butter, softened)
    • 2 teaspoons vanilla
    • 4 cups (1 pound) powdered sugar, sifted
    Sub-recipe steps
    1. Combine in a food processor and pulse just until smooth and creamy: 8 ounces cold cream cheese, cut into cubes; (6 tablespoons [¾ stick] unsalted butter, softened); 2 teaspoons vanilla; 3 cups powdered sugar, sifted
    2. If the frosting is too stiff, pulse for a few seconds longer; do not overprocess. If desired, stir in additional flavoring to taste, such as: (Grated lemon or orange zest, ground cinnamon, or liqueur)
    3. Beat in a medium bowl, or in a stand mixer with the paddle attachment, at low speed just until blended: 8 ounces cold cream cheese, cut into cubes; (5 tablespoons unsalted butter, softened); 2 teaspoons vanilla
    4. Add one-third at a time and beat just until smooth and the desired consistency: 4 cups (1 pound) powdered sugar, sifted
    5. If the frosting is too stiff, beat for a few seconds longer; do not overbeat. If desired, stir in additional flavoring to taste (see version I).

Let's Cook

  1. Step 1.

    Whisk together thoroughly in a medium bowl: 2 ¼ cups sifted (225g) cake flour; ¾ teaspoon baking soda; ½ teaspoon baking powder; ½ teaspoon salt

  2. Step 2.

    Combine in a medium bowl: 1 cup lightly mashed ripe bananas (about 2 large); ¼ cup (60g) plain yogurt or buttermilk; 1 teaspoon vanilla

  3. Step 3.

    Beat in a large bowl, or in a stand mixer with the paddle attachment, until creamy: 1 stick (4 oz or 115g) unsalted butter, softened

  4. Step 4.

    Gradually add and beat until light and fluffy, about 5 minutes: 1 cup plus 2 tablespoons (225g) sugar

  5. Step 5.

    Beat in one at a time: 2 large eggs

  6. Step 6.

    On low speed, add the flour mixture in 3 parts, alternating with the banana mixture in 2 parts, beating until smooth. Scrape the batter into the pan(s), smoothing the top. Bake until a toothpick inserted into the center comes out clean, 30 to 45 minutes.

  7. Step 7.

    Let cool in the pan(s) on a rack for 10 minutes. Invert onto the rack, peel off the parchment paper, and turn right side up to cool completely.

  8. Step 8.

    For a 2-layer cake, arrange between the layers: 2 ripe bananas, sliced

  9. Step 9.

    For either the 2-layer cake or the single-layer cake, frost with: Cream Cheese Frosting or Chocolate Sour Cream Frosting
