Baked Stuffed Jumbo Shrimp

4 servings We call for two different sizes of shrimp because it is cheaper to buy smaller shrimp for the stuffing mixture. However, if you wish to simplify your grocery list, just buy more jumbo shrimp.

Ingredients

  • 2 pounds shell-on shrimp (16⁄20 or larger)
  • 1
    • ¼ cup chopped parsley
    • 1 garlic clove, minced
    • ½ teaspoon salt
    • ½ teaspoon black pepper
    • 2 tablespoons olive oil
    • Two 1½- to 2-pound live lobsters
    • ¾ cup dry white wine
    Sub-recipe steps
    1. Preheat the oven to 375°F. Toss together in a medium bowl: 1½ cups Browned or Buttered Bread Crumbs; ¼ cup chopped parsley; 1 garlic clove, minced; ½ teaspoon salt; ½ teaspoon black pepper; 2 tablespoons olive oil
    2. Split lengthwise in half, as for Grilled or Broiled Lobster, working on a rimmed baking sheet to collect the juices: Two 1½- to 2-pound live lobsters
    3. Remove and discard the head sacs and tail veins. Moisten the stuffing with 2 tablespoons of the lobster juices and, if desired, the flavorful tomalley. Lightly press the mixture into the body cavities and tails. Pour into the baking sheet: ¾ cup dry white wine
    4. Bake the lobsters until the stuffing is very hot and browned on top and the tail meat feels firm when pressed with your finger, 30 to 35 minutes, basting the claws 2 or 3 times with the pan juices. If the stuffing looks dry, moisten it again with pan juices, but do not add more than a teaspoon or two, or the stuffing will become soggy.
  • 4 ounces small shrimp, peeled and chopped
  • Dry white wine or chicken stock or broth

Let's Cook

  1. Step 1.

    Position a rack in the upper third of the oven. Preheat the oven to 450°F. Butterfly: 2 pounds shell-on shrimp (16⁄20 or larger)

  2. Step 2.

    Prepare: Stuffing for Baked Stuffed Lobster, using fresh bread crumbs instead of browned and 6 tablespoons melted butter instead of olive oil

  3. Step 3.

    Stir in: 4 ounces small shrimp, peeled and chopped

  4. Step 4.

    Arrange the large shrimp in a single layer in a shallow baking dish and top with the stuffing, pressing it lightly so it adheres. Pour around the shrimp, just enough to cover the bottom of the baking dish: Dry white wine or chicken stock or broth

  5. Step 5.

    Bake until the shrimp are piping hot, 10 to 12 minutes. Serve immediately.
