Let's Cook

  1. Step 1.

    In a medium bowl, whisk together 1½ tablespoons extra virgin olive oil, 1 tablespoon fresh lemon juice, ½ teaspoon salt, and ½ teaspoon pepper until combined.

    Add 2 (5-ounce) cans solid white tuna in water (rinsed), 1 avocado (cut into chunks), and 2 thinly sliced scallions to the bowl. Toss gently until everything is evenly coated with the dressing.

  3. Step 3.

    Divide 2 cups mixed greens among 4 (10-inch) wraps. Top each with an equal portion of the tuna-avocado mixture.

  4. Step 4.

    Roll each wrap tightly, tucking in the sides as you go. Serve immediately.
