Step 1.
Preheat oven to 350°F (175°C).

In a medium bowl, cream together 2 cups butter and 1 cup white sugar until smooth. Stir in 1 egg yolk and 2 teaspoons vanilla extract. Gradually stir in 3 cups all-purpose flour until just blended, then mix in 1-1/3 cups crushed potato chips and 2 cups chopped pecans.

Drop dough by rounded spoonfuls onto ungreased cookie sheets. Dip a fork in water and criss-cross the top of each cookie to flatten slightly.

Bake in preheated oven for 12 to 14 minutes, or until edges are lightly browned. Cool on baking sheets for a few minutes before transferring to wire racks to cool completely.
