Melt 1/4 cup butter and set aside to cool slightly.

In a large bowl, whisk together 2 cups flour, 1/3 cup sugar, 1 tablespoon baking powder, and 1/2 teaspoon salt.

In a separate small bowl, beat 1 egg, then stir in 1 cup milk until combined.

Pour the egg-milk mixture and the melted butter into the dry ingredients. Stir with a spoon or spatula until just combined—about 25 strokes. The batter should be lumpy; do not overmix.
