Classic Chinese dumplings filled with ground pork and Chinese cabbage. Serve with soy-ginger dipping sauce.

- 1/4 tsp white pepper powder
Prepare
- 2 1/2 cup Chinese cabbage, finely chopped
- 1 green onion, finely chopped
- Mince 1 tsp ginger

Step 1.
Make the Dumpling Dough according to the recipe. While the dough is resting, prepare the Soy-Ginger Dipping Sauce and set aside.

In a medium bowl, combine 1 pound ground pork, 2½ cups loosely packed finely chopped Chinese cabbage, 2 tablespoons soy sauce, 1 finely chopped green onion stalk, 1 teaspoon minced ginger, 1 teaspoon sesame oil, and ¼ teaspoon white pepper powder. Mix well until evenly combined. Set the filling aside.

Fill each dumpling wrapper with about 1 tablespoon of the filling, following the folding technique in the Making Dumplings section.

Cook the dumplings by boiling, steaming, or panfrying according to the Cooking Dumplings instructions. Serve hot with the Soy-Ginger Dipping Sauce.
