No Peeking Prime Rib Roast
A prime rib roast cooked with a no-peeking method for a perfect medium-rare. The roast is seared at high heat then cooked low and slow.

Step 1.
Use the small end cut of prime rib and bring to room temperature.

Step 2.
Start cooking between 12 and 1 pm if you are going to eat before 8 pm.

Preheat oven to 400°F.

Step 4.
Season the roast.

Step 5.
Cook for 15 minutes at 400°F, then turn down to 375°F and cook for 45 minutes.

Step 6.
Turn off oven and let roast sit in the oven.

Remove roast from oven and let stand covered for 10 to 15 minutes, then carve.

If cooking more than a 4lb rib roast, preheat oven to 475°F, cook for 1 minute, then turn down to 375°F and cook for 45 minutes.
