MAMA Lil’s Peppers & Tillamook Cheddar Biscuits

- 1 1/2 cup unsalted butter, diced and chilled
- Chop 1 cup Mama Lil's peppers
- Grate 1/2 lbs extra-sharp cheddar cheese
- 3 cup buttermilk, chilled
- Melt 2 tbsp butter

Step 1.
In the bowl of a stand mixer fitted with the paddle attachment, mix the flour, sugar, baking powder, salt, and baking soda on low speed until combined, about 30 seconds.

Increase the speed to medium-low and add the diced chilled butter, mixing until the butter pieces are the size of small peas, about 2-3 minutes.

Add the chopped Mama Lil's peppers and grated cheddar cheese, mixing on low until just distributed, about 30 seconds.

With the mixer running on low, pour in the chilled buttermilk and mix just until the dough comes together; it will be shaggy with some dry bits. Do not overmix.

Preheat the oven to 450°F.

Turn the dough out onto a lightly floured surface. Using a floured rolling pin, gently roll it into a 1½-inch-thick circle.

Cut out 12 biscuits using a 3-inch cutter, dipping the cutter in flour between cuts. Press straight down without twisting to ensure high rise.

Arrange the biscuits on two baking sheets, spacing them about 1 inch apart. Brush the tops with melted butter.

Right before baking, reduce the oven temperature to 425°F. Bake until golden brown on top, 22 to 25 minutes, rotating the sheets halfway through. Let cool on the baking sheets for a few minutes before serving.
