Pan Bagnat (Provençal Pressed Tuna Sandwich)

4 servings This is like a Niçoise salad in sandwich form. Our take is a little unconventional with the addition of roasted eggplant, but you can leave it out, if desired, or substitute cooked artichoke hearts.

Ingredients

  • 1 medium unpeeled eggplant
  • 1 large red bell pepper, halved
  • One 12-ounce can or two 5-ounce cans albacore tuna, drained
  • ⅓ cup coarsely chopped pitted olives
  • ¼ cup coarsely chopped parsley
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon Dijon mustard
  • Salt and black pepper to taste
  • 1 baguette, 4 ciabatta rolls, or 1 large crusty round loaf (8 to 9 inches)
  • 1 garlic clove
  • 12 to 15 basil leaves
  • 1 large tomato, sliced

    Sub-recipe steps
    1. Place in a pot in a single layer: Unshelled eggs, from the refrigerator
    2. Cover them by 1 inch with: Cold water
    3. Bring to a boil over high heat. Promptly remove the pot from the heat, cover, and let the eggs stand: 8 to 12 minutes for large eggs, or 11 to 15 minutes for extra-large and jumbo eggs (6 to 10 minutes for small and medium eggs). For room temperature eggs, subtract 1 minute from these cooking times. The lower amount of time will yield eggs that have set whites and barely set yolks, while the higher amount of time will yield eggs that are hard-cooked all the way through. When the eggs are done, run cold water over them to stop the cooking.
    4. To peel hard-boiled eggs, crack the shell all over and roll the egg gently between the palms of your hands to free the thin tough skin from the egg and make shelling easier. Find the air cell and start peeling from there, peeling away the inner membrane along with the shell. Rinse the eggs after shelling to remove any shell fragments.
    5. To slice eggs smoothly, dip a knife blade into water before slicing. Hard-boiled eggs are best stored in their shells in the refrigerator. A peeled hard-boiled egg should be used within a few days.
    6. STEAM METHOD
    7. Have ready: Unshelled eggs, from the refrigerator
    8. If using a steamer insert, gently place the eggs inside, bring 1½ inches of water to a rapid boil in a pot, and fit the insert onto the pot. If using a steamer basket, place it inside the pot, bring the water to a boil, and gently place the eggs in the basket with long-handled tongs. Cover immediately and steam the eggs on high heat for 8 minutes for large eggs with a set white and fudgy yolk, or 11 minutes for eggs that are firm all the way through. For room temperature eggs, subtract 1 minute from these cooking times. As the eggs cook, fill a bowl with ice water. Immediately transfer the eggs to the ice water and cool completely. Peel as directed in I.

Let's Cook

  1. Step 1.

    Preheat the oven to 400°F. Slice lengthwise into ¼-inch-thick slabs: 1 medium unpeeled eggplant

  2. Step 2.

    Flatten with the palm of your hand: 1 large red bell pepper, halved

  3. Step 3.

    Brush both sides of the eggplant slices and bell pepper with a little olive oil. Place them on a baking sheet and roast until tender, 15 to 20 minutes. Cool the peppers and eggplant slightly. When cool enough to handle, remove the skin from the pepper.

  4. Step 4.

    Meanwhile, combine in a medium bowl: One 12-ounce can or two 5-ounce cans albacore tuna, drained; ⅓ cup coarsely chopped pitted olives; ¼ cup coarsely chopped parsley; 3 tablespoons extra-virgin olive oil; 2 tablespoons lemon juice; 1 tablespoon Dijon mustard; Salt and black pepper to taste

  5. Step 5.

    Split horizontally: 1 baguette, 4 ciabatta rolls, or 1 large crusty round loaf (8 to 9 inches)

  6. Step 6.

    If using a round loaf, remove some of the soft inner bread, creating a cavity. Lightly toast the bread, then rub over the toasted surfaces: 1 garlic clove

  7. Step 7.

    Cover the bottom piece(s) of bread with: 12 to 15 basil leaves

  8. Step 8.

    Pile the tuna mixture on top of the basil. Top with the roasted eggplant, bell pepper, and: 1 large tomato, sliced; 3 Hard-Boiled Eggs, sliced; Cracked black pepper

  9. Step 9.

    Cover with the top piece(s) of bread, and wrap tightly in several layers of plastic wrap. Place on a rimmed baking sheet or cutting board and weight down with a cast-iron skillet or other heavy weight (or, if you’d like to follow M.F.K. Fisher’s advice, have someone sit on it). Allow the sandwiches to marinate, refrigerated, for at least 1 hour and up to 24 hours.
